Ingredients

1.8kg Beef Chopped
300g Chili Peppers Finely Chopped
1 Red Onion Finely chopped
2 Garlic Cloves Crushed
1kg Dhania Finely chopped
1/2 tablespoon Cloves Ground
2 tablespoons Oregano Dried and ground
3 tablespoons Paprika
1 tablespoon Cumin
1 tablespoon Cinnamon powder
4 Tomatoes Finely chopped
2 cups Kidney Beans preboiled and rinsed
a pinch Salt

Prepping the beef

Heat some oil in a pan over medium-high heat. Season the beef with some salt then cook it while stirring for 5 minutes or until browned. Once done, transfer to a colander to drain off the excess cooking oil.

Frying

In another cooking pot, add the oil drained from the fried beef then follow up with finely chopped onions. Allow to cook till fragrant then add the red bell peppers.

Cook till soft, add in the garlic and dhania stems. This should cook on high heat for a minute while stirring to avoid charring before adding the cumin, paprika, oregano and cloves. Cook this till aromatic.

Stewing

Return the beef to the pot, stir then add the tomatoes and just enough water to cover the pot content.
Cover the pot, lower the heat then allow to cook for at least 90 minutes or until the beef softens.

Adding the beans

90 minutes later, the beef is tender. If not, allow to simmer a little longer before adding the kidney beans.
Now is a good time to check whether the seasoning is right. Adjust accordingly if need be. Stir then let cook for 10 minutes before turning off the heat and garnishing with dhania leaves.

Your meal is now ready to serve.
