MELTING THE SUGARTo an already hot pan , add 2 tablespoons of sugar and allow to melt while stirring till it starts smoking then add the chicken pieces. |

STEWINGTo the now aromatic combination in the cooking pot, add the diced carrots, salt and peas. Stir thoroughly to mix then cover and let simmer for a minute or so before adding some soy sauce, oregano, curry powder and tomato paste. Stir to mix then add in the tomato puree. This not only helps with flavoring but also deglazing the pan. |
