Ingredients

Adjust Servings:
2 tbsp White Sugar
Chicken any cut
2 Red Onion finely chopped
2 Carrots diced
1 cup Green Peas (Minji)
a dash Soy Sauce
1 tsp Oregano
1 tsp Curry Powder
1 tbsp Tomato Paste
1/2 cup Tomato Puree
1/2 cup Coconut Milk

    MELTING THE SUGAR

    To an already hot pan , add 2 tablespoons of sugar and allow to melt while stirring till it starts smoking then add the chicken pieces.

    BROWNING THE CHICKEN

    Reduce the heat to medium and fry the chicken till it starts turning golden, then add the chopped onions.
    Stir to combine then cover and allow to cook till the onions are soft and fragrant.

    STEWING

    To the now aromatic combination in the cooking pot, add the diced carrots, salt and peas. Stir thoroughly to mix then cover and let simmer for a minute or so before adding some soy sauce, oregano, curry powder and tomato paste.

    Stir to mix then add in the tomato puree. This not only helps with flavoring but also deglazing the pan.
    Stir once more then cover and allow to cook for 12 to 15 minutes before finally going in with some of that coconut milk to seal in all those flavours.

    SEALING THE FLAVORS

    Bring the sauce to a boil then cover and allow to simmer on low heat for 20 minutes.

    Remember the golden rule: Never rush cooking with coconut milk or cream. Those flavors have to really infuse.
    20 minutes later, your meal is ready to serve. Feel free to add a garnish of your choice if need be.

    SERVING

    Pair with a starch of your choice. I went with plain white rice.
