FRYING

Into a cooking pot with hot cooking oil, add the finely chopped onions and Chilli peppers.
Cook till soft and fragrant before adding the tomatoes, Turmeric and Paprika then stirring to combine everything real nice.

Allow this to cook on high or medium heat till it forms a paste.

STEWING

To the paste, add the potatoes and cook till they get translucent before adding in the preboiled Githeri and water as per your preference.

Allow to cook for 5 minutes before adding in the carrots and cook for another 5 minutes or till the potatoes are soft enough. Use a fork to pry.

SERVING

If you played your cards right with the water, you should end up with nicely thick gravy.
Your meal is now ready to serve. Garnish with dhania leaves if available.

And that’s it! Your meal is now ready to serve! Give it one last stir then plate. A side of avocado goes really well with this one.
