PREPPING THE PEASStart with boiling the Minji. Add some salt and thyme while at it to enhance the flavors. Once done, drain the now soft Minji and set aside. |

STEWINGCook the onions till soft and fragrant while constantly stirring then add in the tomatoes, tomato paste and turmeric. Stir once more to combine everything. If it starts sticking to the pan, lower the heat and add some water. |

ADDING THE MINJIAfter one more thorough stir, add the minji stir then a little hot water before checking whether the seasoning needs adjusting. |
