PREPPING THE PASTERoughly chop up one onion, all bell peppers, garlic, chili pepper and ginger before putting them all into a food processor. |

DEEP FRYINGIn a pan on a medium-high heat, fry the chicken drumsticks (pull the skin off first, if you prefer) with a splash of oil for 10 minutes, or until golden, turning occasionally. |

STEWINGAdd the remaining chopped onion and red bell pepper to the pan and allow to cook till soft and fragrant before adding the paste from the food processor and cooking for 5 minutes. Reduce the heat to minimum, cover the pot and let simmer for 45 minutes or until the sauce darkens and thickens. Your meal is now ready to serve. |
