    PREPPING THE PASTE

    Roughly chop up one onion, all bell peppers, garlic, chili pepper and ginger before putting them all into a food processor.
    Follow up with the chicken cubes, honey and powder spices, then blitz to a paste.

    DEEP FRYING

    In a pan on a medium-high heat, fry the chicken drumsticks (pull the skin off first, if you prefer) with a splash of oil for 10 minutes, or until golden, turning occasionally.
    Once done, set the drumsticks aside leaving the pan on the heat.

    STEWING

    Add the remaining chopped onion and red bell pepper to the pan and allow to cook till soft and fragrant before adding the paste from the food processor and cooking for 5 minutes.
    Add some water then follow up with the tomato puree and salt. Stir well, bring to a boil before returning the drumsticks to the pan.

    Reduce the heat to minimum, cover the pot and let simmer for 45 minutes or until the sauce darkens and thickens. Your meal is now ready to serve.
    Turn off the heat and garnish with dhania leaves if available.

    SERVING

    Pair with a starch of your choice. I served mine with white rice.
